Easy Bran Muffins
Pre- heat oven to 350 degrees F
Muffin tin
Large paper muffin cups
1 cup Kellogg’s Al ll Bran cereal or slightly more if needed
1 cup flour
1 cups brown sugar
1/3 cup canola or vegetable oil
1 cup milk
1 large egg
1 teaspoon vanilla
1 teaspoon baking powder
1/4 tsp baking soda
*Variations: add one or two of the following ingredients to the batter
*1 cup raisins
*1 cup chopped apple or 1 cup fresh or frozen blueberries
Batter should be very thick so more bran can be added to batter as needed to thicken
*Your choice of jam spooned by ½ teaspoon (strawberry, blueberry, etc.) may be added to top of muffins, if desired
Mix all ingredients together by hand. Do not over mix.
Spoon batter into paper cups in muffin tin about three quarters full
Bake for approximately 18 minutes to 25minutes until done
Makes approximately 12 muffins

5 cup loaf
1 cup all bran
1 cup milk
1 cup brown sugar (not firmly packed)
1 cup dried fruit and nuts (what ever you like)
1 cup self raising flour (white for lighter – wholemeal for a denser loaf)
soak bran and sugar in milk for 1 hr mix (with a wooden spoon don’t beat) in dried fruit and flour pour into a greased/lined loaf pan and bake in moderate oven for about 45min or until cooked.
instead of using a measuring cup use a normal size coffee mug
loaf is awesome sliced warm out of the oven with butter/marge or you can lightly toast it for breakky etc

Banana Bran Scones
Ingredients
1 cup all-purpose flour (about 4 1/2 ounces)
1/2 cup oat bran
2 tablespoons chilled butter, cut into small pieces
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
3/4 cup ripe mashed banana (about 2)
1 tablespoon light brown sugar
1/4 cup fat-free buttermilk
1 1/2 teaspoons fat-free buttermilk
1 1/2 teaspoons granulated sugar
Preparation
Preheat oven to 400°.
Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour and next 6 ingredients (through cinnamon) in a food processor; pulse until mixture resembles coarse meal.
Combine banana and brown sugar in a medium bowl; let stand 5 minutes. Add flour mixture and 1/4 cup buttermilk alternately to banana mixture, stirring just until moist.
Turn dough out onto a lightly floured surface; knead lightly 1 1/2 minutes with floured hands. Pat dough into a 6-inch circle on a baking sheet lined with parchment paper. Cut dough into 8 wedges, cutting into, but not through, dough. Brush 1 1/2 teaspoons buttermilk over surface of dough; sprinkle with granulated sugar. Bake at 400° for 12 minutes or until lightly browned. Remove from pan; cool on wire racks.

Fabulous Oatmeal-Bran Cake
1 1/2 cups boiling water
1/2 cup rolled oats
1/2 cup whole bran cereal
1 cup white sugar
1 cup packed light brown sugar
1/2 cup shortening
2 eggs
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 1/2 cups all-purpose flour
Pour boiling water over oats and bran cereal, and let stand 10 minutes.
Combine the remaining ingredients, and add oat mixture to them. Pour into two 8 or 9 inch pans.
Bake at 350 degrees for 30 to 40 minutes. To make muffins bake about 15 minutes, or until toothpick comes out clean.
